Braised Sea Cucumber with Scallions

Ingredients:

  • 400g sea cucumber (soaked and cleaned)
  • 3 large scallions, cut into sections
  • 30g ginger, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • 1 tablespoon Shaoxing wine
  • 200ml chicken stock
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water)

Instructions:

  • Heat oil in a wok over medium heat. Add ginger and scallions, stir-fry until fragrant.
  • Add the sea cucumber and stir-fry for 2-3 minutes.
  • Add soy sauce, oyster sauce, sugar, and Shaoxing wine, stir to combine.
  • Pour in chicken stock and bring to a boil. Reduce heat to low and simmer for 20-30 minutes until the sea cucumber is tender.
  • Adjust seasoning with salt. Thicken the sauce with cornstarch slurry if necessary.
  • Serve hot, garnished with scallions.
